Great River Organic Milling is located on the upper Mississippi River, in the heart of what is called the Hiawatha Valley. The natural beauty of the area is a constant reminder of the importance of our commitment to organic agriculture. An organic farm strives to protect our environment by building and maintaining healthy soil. It has been shown that grain and other food crops grown in a healthy soil, resist pests and diseases better than conventionally grown crops and also contain more vital nutrients important to humans. Consuming organic foods promotes the health of individuals and the land on which it was grown. Most great River flour is stone-ground. We believe the natural granite millstones contribute to the quality, taste and nutritional integrity of whole grain flour. The cooler Temperatures that occur during milling with stones allows important enzyme activity to continue. Protein levels are also maintained. Our stone-ground flours are milled to order, to retain the nutritional value of the flour. Great River is certified organic by Quality Assurance International and Kosher Approved. Obtaining our certification requires a yearly inspection of our milling facility and records to insure that our products meet industry standards.

So I was a bit hesitant to buy this flour after reading several reviews that said they had bugs form after a few weeks in the flour. So I did some research and what I'm about to tell you might shock you. ALL non-chemically treated flour with have bug eggs. It's due to their microscopic size and that grain comes from a plant that is grown outside. I know, a bit gross to think about but that is the world we live in. So what do you do if you want to keep flour more than a week or two. Simple, Freeze it for 48 hours. Freezing flour does a couple of things. One it kills all bug eggs and larvae permanently. (YAY!) Next you can store flour in the freezer to increase it's shelf life up to a year! (yay for bulk buy) Now, some people think just putting the flour in air tight containers is enough but it isn't. Doing that doesn't kill the eggs, so you have to freeze it for 48 hrs BEFORE you put it in air tight containers!!!! $8 hrs. in the freeze is key!!!! I just plopped the bag whole in my standing freezer ( you could transfer flour to ziplock bags if you can't fit the bag into your freezer), leave for 48 hrs then you can use the flour however you want. I did this and my flour is still good (bought it in july is now sept.) and I have bag a sitting in my cupboard right now that has been out for weeks with no bugs at all. However, I do store most of it still in the freezer as it's convenient for me to only have a small portion out at a time but whatever works for you! This flour is nicely milled, has great flour and is dense! A little goes a long way.
