Due to its ability to mimic the functional properties of egg whites in cooking, aquafaba can be used as a direct replacement for them in some cases, including meringues and marshmallows. Soups and salads Toss whole chickpeas onto any salad, soup, or stew. As a snack Spread a layer of chickpeas on a baking sheet.
